Ingredients
100–150g (3.5–5 oz) pastrami, thinly sliced or chopped
2 cups mixed greens (lettuce, arugula, spinach, etc.)
1 small cucumber, sliced
½ red onion, thinly sliced
1–2 tomatoes, diced or cherry tomatoes halved
1 bell pepper (any color), sliced
¼ cup pickles or gherkins, sliced (optional but great with pastrami)
Optional Add-ins:
Croutons or toasted rye bread cubes
Hard-boiled egg, halved
Shredded cheese (Swiss, provolone, or cheddar)
Avocado slices
Cooked chickpeas or roasted potatoes (to bulk it up)
Dressing Ideas:
Mustard Vinaigrette
1 tbsp Dijon or whole grain mustard
1 tbsp vinegar (apple cider or red wine)
2 tbsp olive oil
½ tsp honey (optional)
Salt & pepper to taste
Alternative: Use ranch, Thousand Island, or balsamic vinaigrette depending on your vibe.
Directions
Step 1
Prepare the dressing: Whisk all dressing ingredients together until well combined.
Step 2
Prepare the pastrami: Slice or chop into bite-size strips.
Step 3
You can use it cold or lightly sauté in a pan for 1–2 minutes to bring out the flavor (optional).
Step 4
In a large bowl, toss greens, vegetables, and pickles. Add the pastrami on top.
Step 5
Drizzle with dressing. Add extras like eggs, cheese, or croutons if using.
Step 6
Enjoy immediately while fresh. Add a squeeze of lemon (optional)
