Ingredients
2 Americana boneless chicken breasts or thighs
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
½ tsp black pepper
½ tsp salt
½ tsp cumin or oregano (optional)
Juice of ½ lemon or 1 tbsp vinegar
For the rice:
1 cup uncooked rice (basmati, jasmine, or any you prefer)
2 cups water or broth
Salt to taste
1 tbsp butter or oil (optional)
Directions
Step 1
Marinate the chicken for 15-30 mins or longer in a bowl mix with olive oil, lemon juice and all the seasonings. Let is sit while you prepare the rice. You can also marinate longer in the fridge for a deeper flavor.
Step 2
Rinse the rice if needed. Cook the rice in a pot with 2 cups of water or broth to a boil. Add rice, salt and butter/oil. Lower the heat, cover, and simmer for 15–18 minutes (or according to rice type).
Step 3
Heat a grill pan, outdoor grill, or skillet over medium-high heat. Grill chicken for 5-7 minutes per side (depending on thickness) until nicely charred and cooked through. Let is rest for 5 minutes, then slice if desired.
Step 4
Plate a scoop of rice and put the grilled chicken on the side. Add veggies, fries, or sauce if using. Garnish with herbs or lemon wedge and serve.
